School has started, there's a chill in the air, and yes, it's time for Chicken Marbella once again. Don't you just love Autumn?

VERY EASY AT HOME

Chicken Marbella
The weather is getting cooler so it's time again for this delicious chicken, the most requested dish in our history, by far.  Bone-in chicken pieces flavored with green olives, capers and dried plums. May sound unusual but trust us, this Mediterranean-inspired chicken is a crowd pleaser, (and if somebody doesn't like olives or prunes, they are easy to scrape off!). Bakes in the oven.

Parmesan-Crusted Pork Tenderloins - best seller from last month!
Tender pork tenderloins are encrusted in cumin and parmesan cheese and the result is divine. So simple yet elegant. Bakes in the oven.

Spinach Pesto Spaghetti
A new twist on pesto, our version is made with spinach, nuts, parmesan, olive oil and just the right touch of lemon. The spinach gives this dish lots of vitamins and it may be the way to sneak it past your kids. Cooks on the stove.

Bacon-Wrapped Pork Chops
We have redundantly paired pork and bacon, resulting in very moist pork chops. Rosemary, garlic and olive oil add a nice Mediterranean touch. Stovetop.

Thai Chicken Legs
Chicken drumsticks seasoned with cilantro, fish sauce, hoisin sauce, coriander and garlic (among others) and served alongside spicy Thai sauce. Without the dipping sauce, the chicken legs are very family friendly. Grill for best results.

Bombay Tandoori Steak ~ $3 suppl. charge
In this dish, a marinade made with yogurt and cream, Indian spices and a touch of garlic, ginger and chilis, tenderizes and infuses tri-tip steaks. Perfect for the grill. Easy to adjust the spicy heat to make it more family friendly.

Chicken Scallopini with Fresh Garden Herbs
We are offering this dish once more before the cold weather gets to my garden herbs - yum! When you taste the fresh parsley and tarragon on these tender chicken breasts you won't believe this came from your freezer. A Dinner by the Dozen favorite. Since we cut the breasts in half horizontally they cook in  a flash - sauté or grill.

EASY AT HOME

Corn and Bean Burgers with Chipotle Ketchup ~ NEW!
Looking to incorporate more veggie meals into your diet? You'll love these burgers made with corn, kidney and black beans and seasoned with a touch of chili pepper. Serve the burgers on buns with chipotle ketchup for a delicious dinner. Cooks on the stovetop since they are fragile.

White Chicken Chili ~ $3 supplement
Mild green chiles, white beans and lean chicken breasts make up the bulk of this wonderful white chili. Mild or hot - you add the hot sauce to your liking. Wonderful on a cold day, this chili has lots of chicken in it so it's really hearty. Cooks on your stovetop, although some clients have tried it in their crockpots too.

Glazed Pork Roast with Pineapple and Rice
Moist boneless pork loin bakes in the oven under a hoisin glaze and gets served with a side of roasted pineapple chunks and a pineapple-ginger sauce. So easy. We even provide the rice as a side dish. Oven and stovetop.

Humitas
Usually humitas are cooked like tamales, enrobed in corn husks. In this version, we took the hard work and simplified the dish to cook it in a casserole dish instead. Pureed corn gets mixed with tomatoes, onions, bell peppers, green chiles, milk, cheese and spices. A wonderful side dish or vegetarian entree.

Tortilla Soup
This soup will keep you happy and warm. Chicken soup full of tomato flavors, corn and beans, ready to simmer on your stovetop filling your home with delicious smells. Serve with a side of crunchy tortillas seasoned with chipotle (provided).

Orange Beef and Broccoli Stir-Fry with Rice - NEW!
Tender pieces of beef and crunchy broccoli are stir fried in a orange hoisin sauce and served over rice. Who needs take-out? Absolutely delicious.

Traci's Chicken Pot Pie - best seller from last month (and each time we offer it)
After the arrival of each of my kids, my neighbor, and friend, Traci delivered a chicken pot pie to our doors.  It was so good it almost made up for the sleepless nights. This recipe is based on hers and had become a favorite at Dinner by the Dozen over the years. Flaky pastry tops kid-friendly veggies and chicken in a creamy sauce. Cooks on the stovetop and oven. To make it healthier, we have omitted the bottom crust, but you won't miss it.

Greek Chicken Rollatini
Your family will think you are so fancy when you prepare this dish. First we halve each chicken breast to make it thin, then roll it around feta, roasted peppers and kalamata olives. At home, you sear the chicken rolls in a hot pan and finish by simmering them in chicken broth. Delicious!

Special Pancakes ~ $8.20 ($8.50 w/tax) per selection ~ Serves 4-6
Surprise your family as they head out to school. Ea recipe makes 12+ pancakes depending on size. All you have to provide is a skillet and maple syrup.

  • Dried Berry Pancakes: definitely kid-friendly, these sweet pancakes have a mixture of raisins and craisins and they are absolutely addictive. They are so yummy you could even skip the syrup.
     

  • Cinnamon Apple Pancakes: these pancakes taste of Fall. We blend white and whole-wheat flower to make them healthier, and add cinnamon and apples to make them delectable.
     

  • Southwestern Pancakes: not your usual flapjack, these have a touch of chili and cornmeal, corn kernels, optional green chilis and bacon, all in the batter. You could even serve these for dinner with a side of salsa, or even make them small and use them at your next cocktail party as "blinis" with caviar or salmon and sour cream.
