Cooking Class Topic: Cinnamon Spiced Almonds

Every month, in addition to learning how to prepare dishes from our monthly menu, you will learn how to prepare something amazing, or how to do something in the kitchen in an amazingly simple manner. It's our way of sharing our culinary knowledge with you.

This month we'll teach you an easy recipe for spiced almonds. I always make them for parties because they are so easy and addictive. They also make great salad toppings and holiday gifts. You are going to love this recipe, and of course, we will have samples for everybody to try it, too!

Menu

Let's embrace Fall with warm food that makes us happy to be inside. This month we are featuring some of our favorites - we hope they become yours too.

Please choose 6 or 12 items from the choices below. Be adventurous and choose 6 or 12 different things, or select several of the same dish if it really appeals to you. For logistics reasons, you can choose the same item up to two times.

Sherry Chicken Legs ~ NEW!
Chicken legs are marinated in a tomato and sherry sauce that is to die for. Brown the chicken legs first, then simmer them in the sauce and you are all set.
(low carb - easy to split - moderately easy at home - relatively kid friendly)

Spinach Pesto Spaghetti
A new twist on pesto, our version is made with spinach, nuts, parmesan, olive oil and just the right touch of lemon. The spinach gives this dish lots of vitamins and it may be the way to sneak it past your kids. Cooks on the stove.
(vegetarian - easy to split - v. easy at home - kid friendly - full meal)

Provence Pork Chops
Boneless pork chops, drizzled with herbs de Provence and extra-virgin olive oil. A simple recipe that's perfect for the grill or the skillet.

Shepherd's Pie
One of our top 5 most popular dishes. Lean ground beef mixed with veggies bake under a seasoned mash potato cloud. To finish this dish at home you need a microwave, skillet, and oven, but it's easy to make and it tastes wonderful on a cold evening.
(cannot be split - a bit harder at home - v. kid friendly - full meal)

Shepherd's Pie with Soy Crumbles
Same as above but with soy crumbles instead of beef. We've been told by our non-meat eating customers that this dish is just as wonderful.
(vegetarian - moderately easy at home - v. kid friendly - full meal)

Fish Tacos
Lime-seasoned tilapia fillets are paired with tangy salsa, shredded cheese and corn tortillas. This dish is very popular with our customers, and it's a great way to get your kids to eat fish! You'll feel like you are in Baja on vacation, margarita on hand. Cooks quickly in a skillet.
(low carb w/o tortillas - easy to split - easy at home - kid friendly - full meal)

Pork Roast Calabrese ~ NEW! ~ $5 supplement ($5.18 w/tax)
A very impressive dish. We stuff a large roast of pork loin (3 lbs.) with salami, cheese, capers and fresh herbs prior to roasting it in the oven. All you have to do is roast it, slice it and that's it. We will even help you tie it in the kitchen! Cooks in the oven.
(low carb - easy to split - easy at home - kid friendly)

Cheddar Beer Soup
Something that will keep you warm on  a chilly evening and will help you celebrate Oktoberfest! This creamy soup starts with chicken broth and enjoys the addition of wheat beer and mild cheddar, resulting in a flavor somewhat reminiscent of fondue. Simmers on the stove.
(easy to split - moderately easy at home - so-so kid friendly: some love it and some don't... - full meal)

Vegetarian Cheddar Beer Soup
Same as above but with vegetable broth instead of chicken broth.
(veg - easy to split - moderately easy at home - so-so kid friendly: some love it and some don't... - full meal)

Seared Chicken Thighs with BBQ Sauce
Marinated boneless chicken thighs get quickly seared on your stovetop to retain all the juices and flavors. Served with your choice of sweet all-American, or spicy Thai BBQ sauce - or both of them if you like.
(low carb w/o sauce - easy to split - easy at home - kid friendly)

Glazed Pork Roast with Pineapple and Rice
Moist boneless pork loin bakes in the oven under a hoisin glaze and gets served with a side of roasted pineapple chunks, a pineapple-ginger sauce and rice. Oven and stovetop.
(difficult to split - more complicated at home - kid friendly - full meal)

Minestrone
Back by popular request. Vegetables and pastina (small shaped pasta) simmer in a tomato broth on your stovetop, filling your home with wonderful Italian-inspired aromas.  You can add a few drops of Tabasco or leave it out for a kid-friendly version.
(vegetarian - easy to split - so easy at home - kid friendly - full meal)

Chicken Parmesan
One of the many reasons husbands and kids love us. Chicken breasts seasoned with parmesan cheese and bread crumbs, and topped with more cheese. Serve these breasts over spaghetti with tomato sauce (provided). Cook on your stovetop and finish in the oven.
(easy to split - a bit harder at home - kid friendly - full meal)

Ham & Cheese Large Empanadas
Typical of the central part of Argentina, these empanadas make a great family meal. We have adapted the shape of Chilean empanadas (large and made with two crusts) to an Argentinean filling to help those of you who are "empanada crust impaired" (you know who you are...). This way they are even easier to assemble and the filling is less likely to ooze out. Since the dough is imported and difficult to find, we are offering this dish on a first come-first served basis. We regret the inconvenience but sign up for them early so you can get them! Cooks in the oven.
(cannot be split - a bit harder at home - kid friendly - full meal)

Sweet Orange Salmon - NEW!
An amazing rub of fresh orange zest, brown sugar, cumin, paprika and other spices flavor a juicy salmon fillet. Perfect for the broiler and dinner is ready in less than 10 minutes.
(v. easy to split - v. easy at home - v. kid friendly)

Sweet Orange WILD Salmon - NEW! ~ $7 supplement ($7.25 with tax)
Same as above but with wild salmon instead of farm-raised. More omega 3s and a larger piece of fish.
(v. easy to split - v. easy at home - v. kid friendly)

Chicken Drumsticks with 40 Cloves of Garlic
One of the classic French country cooking dishes. As the name implies, chicken is braised on the stovetop with 40 cloves of garlic and as if by magic, a wonderfully rich sauce appears. Very moist and flavorful, and your house will smell wonderful. And as an added benefit, this dish will keep vampires at bay!
(low carb - easy to split - a bit harder at home - kid friendly)

Chicken with 40 Cloves of Garlic - Cut-up Chicken
Same dish as above. This dish is great with chicken legs but since some families prefer other parts of the chicken we give you the option of having it with a whole cut-up chicken too (bone-in breasts, legs and thighs).
(low carb - easy to split - a bit harder at home - kid friendly)

Chili in a Rush
A wonderful meal even if you don't have time to spare. Simmer this ground beef and kidney bean chili on your stovetop and you'll have dinner on the table in less than 30 minutes.  Leftovers are great at the office the next day.
