Cool weather is finally here: yeahh! Time for soups and hearty dishes, and Thanksgiving too ~ the pumpkin bread pudding I serve is my favorite part of the whole event! We have some wonderful Fall dishes waiting for you. Please join us in the kitchen this month.

This month we'll also share with you a recipe for making wonderful chocolate truffles, without all the usual effort. Of course, there will be lots of sampling involved!

Sweet-and-Sour Beef Meatballs with Rice
Beef meatballs are paired with a wonderful, and tangy, cranberry sweet-and-sour sauce. Serve with rice (provided) for a fun and different meal. Our clients can't stop talking about this white trashy meal that they just love! Stovetop and microwave. The hardest part about this meal is making rice!

Pork and Hominy Chili ~ NEW!
A tomato-based chili that will keep you toasty and happy. You adjust the heat level so this dish is very family friendly and very easy to put together at home. If you've never had hominy, it's like corn but with larger kernels and it has the consistency of garbanzo beans. Delicious!

Pineapple Teriyaki Salmon w/Edamame ~ $3 suppl charge ($3.11 w/ tax)
This juicy salmon gets grilled or broiled and then glazed with a tangy/sweet homemade teriyaki sauce. The resulting glaze reminded us of a Japanese dish, so we just had to pair it with crunchy edamame (soy beans).

Ham and Mozzarella Chicken Rolls
A healthier version of chicken cordon bleu, these chicken breasts get stuffed with ham and mozzarella and the covered in a salsa rosata, a creamy tomato sauce. Pop it in the oven and dinner is on the way!

Traci's Chicken Pot Pie
We never do this but this dish is so good that we are bringing it back even though we just featured it in September. It's just so perfect for a delicious family meal... After the arrival of each of my kids, my neighbor, and friend, Traci delivered a chicken pot pie to our doors.  It was so good it almost made up for the sleepless nights. This recipe is based on hers and had become a favorite at Dinner by the Dozen over the years. Flaky pastry tops kid-friendly veggies and chicken in a creamy sauce. Cooks on the stovetop and oven. To make it healthier, we have omitted the bottom crust, but you won't miss it.

Spaghetti with Creamy Pumpkin Sage Sauce
Think of this as un-constructed pumpkin ravioli - all the same elements but in a savory pumpkin sauce served over spaghetti and then topped at the table with parmesan, sautéed mushrooms and chopped bacon (optional). All the flavors balance each other wonderfully making for a perfect Fall dish. Go ahead, invite guests over!

Twice Baked Stuffed Potatoes
These potatoes were a favorite when we were in our old kitchen in Broomfield, eona ago. We figured it was time they made a comeback. Twice-baked potatoes are great for lunches or easy dinners.  This versatile dish heats up in the oven or the microwave, making it very convenient for fast meals at home, school or even the office. Please let us know which option of potato you'd like:

      Twice Baked Stuffed Potatoes - broccoli and cheddar (veg)

Tipsy Chicken Scaloppini
We slice all-natural chicken breasts in half for fast cooking, and then add a wonderful pan sauce to serve on top. A cross between a margarita and a bloody mary, the sauce has your choice of tequila or vodka, lemon juice, tomatoes, optional pickled jalapeños and a little bit of chicken broth. Cooks on a skillet.

Same sauce as above but served on top of thin pork chops.

Apple Curry Chicken Breasts
Mimi, here it is for you! Four boneless chicken breasts cook in a wonderful sauce made with apple sauce, curry, bell peppers, carrots and other secret ingredients. The result is just heavenly.

Smokey Mesquite Cheese Burgers ~ NEW!
For these delicious burgers we blend ground beef, cheddar cheese, mesquite seasoning and optional bacon. Top this with tangy BBQ sauce and you'll have to lick your fingers.

Choose-your-Rub Pork Loin
Unleash your creativity on lean pork loins! We will have a variety of spice rubs for you to use: rosemary garlic, gremolata (parsley and lemon), spicy Italian, citrus garlic, mesquite BBQ, Cajun or more. Make your choice when you are at the kitchen depending on what smells good to you. Since there are so many choices, we are increasing the limit to three (meaning you can choose this option 3 times if you'd like). Bake in the oven or grill.

Choose-your-Rub Chicken Breasts
During our survey, several of our customers asked for a pork alternative to some dishes so here it is. Four tender, all-natural chicken breasts wait ready for your choice of rubs (see above). Bake in the oven, cook in a skillet or grill.

Shrimp en Papillote ~ $5 suppl. charge ($5.18 w/ tax)
This is one of those dishes that our customers keep talking about so we try to bring it back around the holidays.  Large shrimp with a garlicky sun-dried tomato butter sauce cook in the oven or on the grill, inside a foil package to preserve all the moisture and flavor.  Great taste and easy to assemble too.  Serve alone as an appetizer or over pasta or rice (not provided) to make it a complete meal.

Tortilla Soup
This soup will keep you happy and warm. Chicken soup full of tomato flavors, corn and beans, ready to simmer on your stovetop filling your home with delicious smells. Serve with a side of crunchy tortillas seasoned with chipotle (provided).

Pumpkin Bread Pudding
All the flavors of pumpkin pie in a bread pudding, drizzled with caramel sauce. This is Sole's favorite dessert and a Dinner by the Dozen staple for the holidays. It's perfect for cold evenings or even as an option to the traditional Thanksgiving pumpkin pie. Comforting yet elegant at the same time. Serve this to guests if you want, but make sure to save enough for yourself!

Chicken Yakitori
Tender boneless skinless chicken thighs (all-natural) are marinated in a sweet yakitori sauce (soy sauce, sake, sugar, garlic, ginger). Perfect for those days when you feel like having some great Asian food, without having to call for delivery. Please let us know if you are on a low-carb diet so we can provide you with Splenda to use. Sautee or grill.

Pickled Cranberries ~ $3.00 ($3.25 w/tax)
A great addition to your Thanksgiving meal or anytime that you have poultry. We have done all the work, all you have to do is keep these crunchy delicious cranberries refrigerated, and serve!

Artisanal Ice-Creams ~ $5.00 ($5.42 w/tax)
As you know, we are die-hard foodies. When we tried this ice-cream, we knew we had found something exceptional that we wanted to share it with you. Peter, a local guy from Louisville, makes this amazing ice-cream for restaurants throughout Colorado. He doesn't sell to the public but he agreed to let us do it. We had to show some restraint and pass on the Roquefort ice cream (delicious!), but we have lemon chocolate chip, cupcake, cherry almond, chocolate hazelnut, vanilla bean and caramel kahlua. Definitely special enough for guests or save it for yourself!

Side dish - Italian Vegetable Sauté ~ $5.00 ($5.18 w/tax)
A wonderful mix of yellow squash, zucchini squash, onions and peppers tossed with a lovely Italian herb vinaigrette. Serves 2-3 portions.

Side dish - Broccoli with Garlic Vinaigrette & Toasted Garlic Chips ~ $5.00 ($5.18 w/tax)
Steamed broccoli gets tossed with our house made lemon garlic vinaigrette and then topped with crunchy toasted garlic “chips”, actual slices of garlic that are toasted brown which add a wonderfully “nutty” taste to this dish. This broccoli goes great with our spice-rubbed pork loins and chicken breasts. Serves 2-3 portions.

Side dish - Asian Sesame Green Beans ~ $5.00 ($5.18 w/tax)
Bright crunchy green beans are steamed, then quickly sautéed with a wonderful sesame dressing and sprinkled with toasted black and white sesame seeds on top. Serves 2-3 portions.

Side dish - Couscous with Dried Cranberries and Toasted Almonds ~ $6.50 ($6.73 w/tax)
The perfect fall weather side dish (or light vegetarian lunch with a salad, please indicate if you wish vegetarian, we will use vegetable broth). Couscous is a small grain shaped pasta that cooks in minutes and takes only knowing how to boil water. We’ve added a lovely mix of dried cranberries, toasted almonds and warm spices that make it a delightful side dish with any meal. Serves 2-3 portions.

The day of the session, please:

  • Bring a cooler with ice packs to transport all your food home. We will provide all the foil containers and Ziploc bags for your food.
  • Plan to go home directly after the session so you can freeze your food ASAP to ensure safety and best quality.
