Cooking
Class: Maple Syrup Salmon Bites
This month we'll
share with you a wonderfully easy appetizer that you can use to show
off this holiday season. Move over Martha!
Menu
Please choose 6 or 12 items from the choices below. Be adventurous
and choose 6 or 12 different things, or select several of the same
dish if it really appeals to you. For logistics reasons, you can
choose the same item up to two times.
Hawaiian Chicken Sandwiches
Forget that it's wintertime and have a luau! We split all-natural
chicken breasts to make thin scaloppini that cook in a flash. Then we
add a wonderful sweet and salty pan sauce and pineapple, and you are all
set for dinner sandwiches served on delicious ciabatta rolls that you
bake fresh in your oven. Serves 4. Skillet and oven.
(easy at home - kid friendly -
full meal)
Chai Pork Loin
Chai (spiced black tea with hints of cardamom and other spices)
flavors a boneless pork loin while tenderizing it. Then the marinade
is used to cook the loin in the oven, yielding a very tender and
juicy roast. So simple yet so inspired.
(low carb - v. easy at home -
kid friendly)
Pistachio Basil Cod
This menu item has been in our
December menu ever since 2004. It's just perfect for this time of the
year and it looks beautiful! Cod fillets get lots of flavor from
basil pesto and a nice crunch from pistachios. A delicious dish that
also looks very festive with its green colors. Definitely nice
enough for company.

Humitas ~ NEW!
Usually humitas are cooked like tamales, enrobed in corn husks. In
this version, we took the hard work and simplified the dish to cook
it in a casserole dish instead. Pureed corn gets mixed with
tomatoes, onions, bell peppers, green chiles, milk, cheese and
spices. A wonderful side dish or vegetarian entree.
(vegetarian - easy at home - kid friendly
- light meal)
Chicken Breasts in Mustard-Cream Sauce
Oh, la
la! What could be more French than the combination of mustard, cream
and tarragon? The mustard-cream sauce makes these tender chicken
breasts very refined, but they are easy enough that you can make
them for an everyday meal. Sauce gets served alongside the chicken,
so it's easy to omit for those picky-eaters in your life. Cooks in a skillet.
(low carb w/o rice - easy to split -
moderately easy at home - kid friendly)
Maple Almond Granola
What a better way to tell somebody you care than by preparing
something healthy, and yummy, for their breakfast? Perfect layered
with yogurt and berries, served with milk or just eaten straight out
of the jar. This granola was one of the stars from our past holiday
sessions. When preparing the granola you get to choose which dried fruits
you'd like to add: raisins, cranberries, prunes, apricots, etc. Bakes in
the oven.

Napa Roasted Chicken
In Spain, people eat grapes to celebrate the New Year - one grape
per clock ring. Bone-in chicken
pieces are ready to roast in your oven with red and green grapes,
shallots and a drizzling of balsamic vinegar. Nice enough for
company, special enough for your family. We know it sounds unusual
but the flavors work great together, and the grapes are easy to
scrape off if they freak out your kids.
(low carb w/o grapes - easy to split -
v. easy at home - kid friendly)
Beer Beef Fajitas
Tender
steak pieces marinated in beer and South of the Border seasonings
(chili, cumin and red pepper) make wonderful fajitas. We even
provide the peppers, cheese and tortillas. Perfect for a fun
evening. Cooks on a skillet.
(low carb w/o tortillas - easy
to split - easy at home - kid friendly - full meal)
Pork Fajitas
For something a
bit different, here we season pork strips with your choice of garlic
and taco seasoning for a milder version, or with chipotle and cumin
for a spicer one.
These
fajitas come with peppers and onions, tortillas, cheese and salsa.
Cooks on a skillet.
(low carb w/o tortillas - easy
to split - easy at home - kid friendly - full meal)
Chicken Fajitas
We have made it so
easy to throw a fajita party! Just order one of each and
you'll be set! In this version, we have replaced the pork with
chicken but kept the seasonings the same. As in the other ones,
these fajitas come with peppers and onions, tortillas, cheese and
salsa. Cooks on a skillet.
(low carb w/o tortillas - easy to
split - easy at home - kid friendly - full meal)
Gnocchi with Herbed Tomato Sauce
in Argentina we have this unusual custom of eating gnocchi (potato
dumplings) on the 29th of the month and putting a peso bill under
the dish. If you do so, you are almost guaranteed enough
money to last through the next month. In the spirit of the
recession, we thought we'd share this weird custom with everybody! These gnocchi in an herbed
tomato sauce are great for any day of the month. Simmers on the
stove.

- kid friendly - full meal)
Penne with Herbed Tomato Sauce
If you are not a gnocchi-lover, you can still enjoy this wonderful
sauce.

Korean Flank Steak
Perfect for the grill, this tender flank steak is full of flavors:
garlic, soy sauce, honey, sesame oil, red pepper flakes, etc. You will fight for the
leftovers, that is, if there's any left... This dish is worth
grilling even if you have to wear a parka while doing it!
(low carb - easy to split -
easy at home - a bit spicy)
Chicken St. Tropez
This dish
will fill your house with the wonderful aromas of "wine-enhanced
chicken" (Nigella Lawson's words). The lemon, honey and herbes de
Provence add a nice touch too. Chicken legs and thighs bake slowly
in your oven until the meat falls off the bone. This dish is for a
day when you have more time since it bakes for 2 hours but it
requires almost no effort from your part.

Chicken Breasts with 7-Spice Rub - NEW!

chicken breasts instead.

Brown Sugar Pecan Pie - NEW!
A wonderful and easy pecan pie gets a
touch of bourbon to make things interesting. This pie is made
without corn syrup so it's denser and richer than some others you've
tasted. Perfect for when you have to take something to somebody's
holiday open house.
(veg - cannot be split - easy at home - kid friendly)
Crunchy Asian
Tilapia
An easy and
novel way to cook this mild white fish: coat it with a tomato Hoisin
sauce and cover it with Japanese breadcrumbs. Bake in the oven or
cook on a skillet on your stovetop.

Italian Vegetable and Meatball Soup

Artisanal Ice-Creams ~ $5.00 ($5.42 w/tax)
As you know, we are die-hard foodies. When we tried this ice-cream,
we knew we had found something exceptional that we wanted to share
it with you. Peter, a local guy from Louisville, makes this amazing ice-cream for
restaurants throughout Colorado. He doesn't sell to the public but he agreed
to let us do it. We had to show some restraint and pass on the
Roquefort ice cream (delicious!), but we have lemon chocolate chip,
cupcake, cherry almond, chocolate hazelnut, vanilla bean and caramel
kahlua. Definitely special enough for guests or save it for
yourself!
Side dish -

Serves 2-3 portions.
