April Menu

Can you believe we've been opened 6 years now? We can't! We are so glad we decided to embark on this little culinary adventure and that you decided to tag along.

To celebrate our 6th anniversary and the 2nd anniversary of our orange kitchen, this month we are featuring some wonderful dishes from all over the world since Sole has wanderlust once again...

Please choose 6 or 12 items from the choices below. Be adventurous and choose 6 or 12 different things, or select several of the same dish if it really appeals to you.

VERY EASY AT HOME

Chicken Rolls w/ Boursin Filling
These chicken breasts are awesome! We roll all-natural chicken breasts around a filling of homemade Boursin cheese (herbed cream cheese) and then top them with an optional piece of bacon which gives extra flavor and juiciness. This dish is baby-sitter proof: just thaw and put in the oven - no work involved.
(low carb - v. easy to split - v. easy at home - v. kid friendly)

Chicken Rolls w/ Chipotle Cream Cheese Filling
Same as above but with chipotle flavored cream cheese instead of the Boursin.
(low carb - v. easy to split - v. easy at home - kid friendly)

Soy and Sesame Pork Loin
A wonderful marinade of soy sauce, sesame oil and Asian seasonings provide lots of flavor to juicy pork loin. Just bake in the oven and slice. This dish smells wonderfully even before you bake it. If you have any leftovers, slice the pork very thin and use it in sandwiches.
(low carb - easy to split - v. easy at home - kid friendly)

Mexican Pizza
A delicious vegetarian pizza with salsa, beans, corn, green onions, peppers and mozzarella cheese, laced with optional chipotle cream and sprinkled with cilantro. Bake straight from the freezer for added convenience.
(vegetarian - easy to split - v. easy at home - kid friendly - full meal)

Chicken Marbella
The most requested dish in our history, by far. Bone-in chicken pieces flavored with green olives, capers and dried plums. May sound unusual but trust us, this Mediterranean-inspired chicken is a crowd pleaser, (and if somebody doesn't like olives or prunes, they are easy to scrape off!). Bakes in the oven.
(low carb w/o brown sugar - easy to split - v. easy at home - relatively kid friendly)

Berry Cobbler
You wouldn't expect us to throw a birthday bash without dessert, would you? This great cobbler is so easy to prepare you won't believe it. Juicy berries in a sweet crust with a crumbly cobbler topping (nuts optional), bake in your oven.
(vegetarian - cannot be split - easy at home - kid friendly)

Chicken Legs Oreganata
Tender bone-in chicken legs marinate in oregano, olive oil and lemon juice for a Greek flair. Bakes in the oven or on the grill.
(low carb - easy to split - v. easy at home - kid friendly)

Mixed Chicken Oreganata
Same as above but with a mix of bone-in chicken legs, thighs and breasts instead of just legs.
(low carb - easy to split - v. easy at home - kid friendly)

Cowboy Bean Salad
We were intrigued by this recipe and we were sooo happy we tried it! This is just an amazing salad with a huge variety of beans (black, garbanzo, black-eyed peas) and veggies (bell peppers, green onions, chiles, optional corn and jalapenos, etc.) And guess what, no cooking required - none whatsoever on your part. Just thaw and serve. And since beans are full of protein, this salad is really filling.
(vegetarian - easy to split - easy at home - kid friendly - light meal)

Bourbon Mesquite Chicken Breasts
A simple yet transforming rub gives these boneless all-natural chicken breasts a Kentucky feel. Grill or cook on your stovetop.
(low carb - easy to split - v. easy at home - kid friendly)

Wild Salmon with Chili Chipotle Rub ~ $7 additional
Oh, this is so good!  A large wild salmon fillet gets rubbed with a wet savory spice mix with chili powder, chipotle in adobo and sage, among other ingredients. The spices give the fish lots of flavor and a lovely red tinge. Great for the grill or a skillet if you prefer.
(low carb - easy to split - easy at home - moderately kid friendly)

EASY AT HOME

Lamb Kefta Kabobs ~ $7 additional
Perfect for a light meal, these kabobs are sure to please. We offered them last year and they were a huge hit so we are bringing them back and are including 2 lbs of lamb for a bigger portion. Just season the ground lamb and shape the kabobs around skewers prior to broiling or grilling. We feature two seasoning blends to flavor the lamb: a tangy lemony mix and a paprika onion version. Serve them side by side with the yoghurt sauce provided so you can decide which one is your favorite.
(low carb - easy to split - easy at home - kid friendly if they eat lamb)

Sweet-and-Sour Beef Meatballs with Rice
Beef meatballs are paired with a wonderful, and tangy, cranberry sweet-and-sour sauce. Serve with rice (provided) for a fun and different meal. Stovetop and microwave. The hardest part about this meal is making rice! People really like this simple dish!
(not easy to split - easy at home - kid friendly - full meal)

Sweet-and-Sour Turkey Meatballs with Rice ~ NEW! ~ $3 additional
Same as above but with turkey meatballs instead.
(not easy to split - easy at home - kid friendly - full meal)

Penne with Herbed Tomato Sauce
A delicious tomato sauce gets the added flavor of Italian herbs, a touch of spice, and a mild earthiness from onions, carrots and bell peppers. Just simmer on the stove and serve over penne pasta.
(vegetarian - moderately easy to split - easy at home - kid friendly - full meal)

Beef Curry with Rice
Not as complex as Jamie Oliver's coconut curry (see below), this dish still delivers exotic, but a bit closer to home. This wonderful quick curry/stir fry cooks in a skillet.  Spicy but not overwhelmingly so because of the rice and tomatoes.
(moderately easy at home - relatively kid friendly - full meal)

A LITTLE BIT MORE INVOLVED AT HOME

Shrimp Coconut Curry a la Jamie Oliver ~ NEW! ~ $9 additional
We wish we could take credit for this dish but we simply can't. Jamie Oliver, the "Naked Chef", uses pretty much every single ingredient in our spice cupboard to deliver an amazing coconut curry dish brimming with Southern Indian style. Spices used include cumin, mustard, curry, fennel, turmeric, ginger, coriander, and garlic. We served it at a party and it was a huge favorite. Serve over jasmine rice (included).
(bit more involved at home - cannot be split - full meal)

Chicken Coconut Curry a la Jamie Oliver ~ NEW! ~$5 additional
With chicken instead of shrimp, but with the same amazingly complex sauce.
(bit more involved at home - cannot be split - full meal)
